Forest or raw honey is best described as unprocessed honey as is in a beehive. It is made by extracting honey from honeycombs of the hive and pouring it over a mesh or nylon cloth to separate the honey from impurities like beeswax. Once strained, raw honey is then bottled and is ready for consumption.
The production of processed honey, on the other hand, has several more steps before it is bottled like pasteurization and filtration. Pasteurization destroys the yeast found in honey by applying heat. This extends the shelf life of the honey and makes it smoother. Filtration removes impurities like debris or air bubbles so that the honey stays as a clear liquid for long and becomes more aesthetically pleasing. Some commercial honey is additionally processed by undergoing ultrafiltration. This process further refines the honey to make it more transparent and smooth. But, it can also remove beneficial nutrients such as pollen, enzymes and antioxidants. Moreover, some manufacturers add sugar and other artificial sweeteners to reduce cost.
Our honey comes from the wild forests of the Western Ghats in Karnataka. It comes straight from the hive, without any pasteurization or addition of any other ingredient such as corn syrup, sugar or a hidden preservative.
